This recipe are for the pesco pollo vegetarians. There is seafood.
Ingredients
Butter
2 onions
2 celery stalks
2 yellow potatoes
1tbsp flour
About 1 tsp anise
about 1tsp thyme
salt
1 cube of broth
coconut beverage
1/2 cup dry sherry
Use butter, add chopped onions and fry till transluscent
add potatoes and celery and fry for a few minutes
add spices and flour and salt fry
Add coconut beverage and bring to a boil
add cube of broth
add dry sherry
Let boil
Serve
You can add shredded cheese and green onions.
Tasty.

Green onion, buttermilk and chedder scones

Okay, I used the second recipe since it has buttermilk and replaced the chive with green onions. It was amazing. I skipped the flattening part and just used my hands to make balls because I was lazy but they still turned out well - it stays moist and is super savory!

Tiramisu Cake
This recipe was given by one of my husband's friends. It was a great hit among my family so I asked him for the recipe.
Ingredients:
-3 eggs, separated
-1 container of 250g marscapone cheese
-2 shakes of salt
-1/2 cup + 1/2 cup sugar (I used icing sugar)
-1/2 cup of heavy whipping cream
-2 tsp of vanilla
-5 tbsp + 1/4 cup Kahlua, chilled in fridge (I forgot the chilled part - still turned out well)
-1/4 cup Ameretto
-2 cups of freshly brewed Expresso, cooled to room temp (I used the powdered expresso beans, and used a french press)
-Italian lady fingers
-Dark cocoa powder
-Cadbury's milk chocolate, shaved (optional) (although I used melted chocolate chips and wrote something on top of the Tiramisu Cake by pouring it into a zip lock back an cuting a small hole)
-Have 3 bowls + 1 bowl for expresso
-1 container to have your cake in
Bowl for Express (Make this first since it has to cool):
-add expresso
-add Kahlua
-add Ameretto
-mix and cool to room temp
Bowl 1(marscapone): put egg YOLKS and 1/2 cup sugar, beat with electrical mixer ( you should get a thick, pale yellow substance)
-add marscapone, beat until well combined
-put in fridge, wash beaters
Bowl 2(whipping cream): pour 1/2 cup of whipping cream and 1 tbsp of icing sugar, and beat until it is thick
-put in fridge, wash beaters (unless you use a hand blender or different blender)
Bowl 3 (should be largest bowl for the Zabaglione): this should have the egg WHITES, add salt and beat until soft peaks form (the beaters should be clean), add the remaining 1/2 cup sugar little by little while the egg whites are beating
-fold in whipping cream (by "fold in, this just means, using a spatula and going down and up as if you are cranking a jack in the box, as if you are pushing down and then covering the mixture...or just YOU TUBE it!)
-fold in Marscapone mixture
-fold in vanilla
-fold in 5 tbsp of Kahlua
-put in fridge
Putting it all together:
-Put a thin layer of Zabaglione in container for Tiramisu
-Dip lady fingers in Expresso mixture and cover layer of Zabaglione
-put another layer of Zabaglioine
-....lady fingers
-repeat until last layer of Z...sprinkle with cocoa powder...then with shavings or the melted chocolate...
Enjoy!

Zucchinai Banana Muffins with chocolate chips

Ok I recently baked this DELICIOUS concoction. I didn't have cinnamon, so I used my pumpkin spice instead. Also, I used Stevia to replace the granulated sugar (just a few drops). The beauty of this recipe is that there is no dairy or eggs.
The recipe is for muffin form, bit I was too lazy and used a pan. :D It was still tasty :p

Lentil Couscous Salad (reincarnated version)

Guilt-free pumpkin pie!
This has no crust, no sugar.
Ingredients:
1 Can of pumpkin
1 can of evaporated milk
1 tsp of pumpkin spice (to make this: 4tbsp cinnamon, 4 tsp nutmeg, 4tsp all spice and 4 tsp ginger powder)
1 egg
1 pie plate
whisk everything, put oil on plate, and pour in batter for 30 minutes at 350 degrees C.

Vegetable Lasagna
I found this recipe at this link (http://www.inspiredtaste.net/22401/fresh-vegetable-lasagna-recipe/) and made a few tweeks:
*I used the Le Veneziane Gluten Free Lasagne Sheets (amazing - I think this is what gave the lasagna the firm texture). I just bought one box, which was enough. The great thing I discovered was it does not need to be cooked, simply place in lasagna.
* 2 yellow zuccini (or it was yellow squash) chopped
*1 red pepper, chopped
*2 small onions
* 2 boxes of mushrooms, sliced
*3 garlic cloves
* 1 can of peeled tomatoes
*olive oil
*oregano
*dried basil
*thyme
*salt
*mozzarella
*parmasean
*2 eggs
*Ricotta cheese
-put olive oil in frying pan, put in chopped onions until a little brown
-put in red pepper
-add spices
-put in zuccini
-put in garlic
-fry for a few minutes for everything to soften a bit
-add can of tomatoes, with juice and continue to fry until half of water evaporates
-add mushrooms and let the mixture heat up until mushrooms are soft
-mix ricotta and eggs and shred cheese while waiting for veggie mix to cook
once done, take the casserole dish and put a bit of oil, place one layer of vegetable mixture, then pasta sheet, ricotta, mozzarella, parmesean, veggie mixture, pasta sheet, ricotta, mozzarella...I think i mixed it up when I did mine, but you can't really tell the difference.
Bake at 350 degrees F for about 20-30 mintues, then near the end, put on Broil for about 1 minute if you want the top cheese to brown.
Enjoy!

Cauliflower-Coriander soup
Ingredients
*1 Head of cauliflower, chopped
*2 green onion (or more if you wish)
* 2-3 garlic cloves, chopped
*2-3 carrots, chopped
*1 container of frozen coriander chuntney
*a bit of sour cream
*salt
*a bit of feta cheese
*oil
*water
*broth
*pour oil in pot, add garlic, carrots, onions until you can smell them (make sure garlic doesn't burn so cook initially on low to medium heat
*add cauliflower, stir
*add water until desired amount
*add stock (I used the cubes)
*add salt to desired
*boil until cauliflower are soft, add feta cheese and then blend
I also topped with some chili oil. Highly recommened!

Chili pepper lemongrass dipping oil
I tried to make this satay sauce I remembered from a vietnamese Pho restaurant, but I got this instead.
Ingredients:
*chili peppers
* oil
* salt
* chopped lemon grass
* one whole garlic
-chop everything
- add oil to pot
-add chili peppers and let fry for a while
-add garlic, turn down heat so they don't burn
-add lemon grass
-add salt
turn down heat and let simmer for a bit.
Serve with bread or anything you want extra flavour with!
Enjoy!

but used cilantro instead by accident. The result was....DELICIOUS!
I used mostly the same ingredients, but some were different, so I"ll just list what I used here.
Ingredients:
*bunch of cilantro
*4 green onions
*half of a lime
*salt
*1 garlic clove
* about 4 tbsp of sheep yogurt
*1 small red potatoe
*1 onion bouillon cube
*1 beef bouillon cube (it was what we had in the cupboard - forgive me! Although, you can use vegetable broth if you have it)
* water
* frozen peas (about 1-2 cups)
*sunflower oil
I heated the sunflower oil on low heat, added the chopped potatoes, chopped green onions, and minced garlic. Fried until I could smell the onions.
Then I added the bouillons and water (as much as the amount of soup I wanted. To make flavourful, I would just add salt).
Then I let the potatoes become tender and then added the peas for about 5 minutes.
Then I took it off the stove and added cilantro, squeezed lime juice, added salt.
Then I used hand blender to blend everything in the pot (too lazy to pour into a blender)
Then I put back on heat and served.

Feta cheese dip
This is an easy to make recipe and quite tasty when dipped with bread.
Ingredients:
Feta cheese
Olive oil/ butter/ margarine (your choice)
Paprika
Just put together and microwaves. Voila!
I used Bulgarian Feta cheese with goat butter and added some paprika. Loved the taste ! (tasted like a chemical less cheesy :P - A less guilty indulgence, I suppose!)

Garlic Mayo (with using handblender or Magic Bullet)
I've always tried to make the garlic sauce from the shawarma places with my hand blender, but never got the mayonnaise consistency with just the traditional ingredients. Apparently, you need a special food processor and then you need to add the oil very slowly. BUT I discovered that I could just add some hellman's mayonnaise!
Anyhoo, here is the recipe:
1 Garlic, chopped
Olive oil (not as much as traditional recipe, but just enough to cover the top of the garlic)
Lemon juice (just a bit)
Salt (just a bit)
Put all ingredients into the magic bullet or blend with handblender. When finished, just add mayonnaise until you reach desired texture.
Enjoy!
