Coconut beverage crepes

2 eggs
1 cup of flour
1 cup of unsweetened coconut beverage
Some salt
Some oil about 1 tablespoon

Mix all in bowl and pan fry.

I put some vegan margarine and some Bonne Maman strawberry jam, roll it and then cut it up.

Vegisinme Chef's Kiwi Guacomole Dip

When your husband eats the remaining tomatoes in the fridge to save them from inevitable death, and you have a craving for guacomole with tortilla chips, this recipe may be for you! Also it only works if you happen to have kiwis :)

*1 chopped garlic clove
*1 ripe avocado
*1/5 of a lemon to squeeze
*2 chopped kiwis
Salt pinch

Blend and enjoy!

Curry Parsnip Pancake

I had a shrivelled parsnip in my fridge and did not want to waste it, so these curry parsnip pancakes were born. Enjoy!

1 parsnip, shredded
1 small onion, shredded
2 eggs
About 1/2 cup of flour
1 tbsp curry powder
1 tsp paprika
1/2 tsp to 1 tsp thyme

Mix and fry till golden brown

Dipping sauce:
1 part dijon
1/2 part honey
1/2 part apple cider

Quinoa Enchilida

I found this simple, healthy and delicious recipe on Damn Delicious and made a few tweeks using the Enchilada sauce from another website called, Budget Bytes(I just substituted the chili powder with paprika.) Also, I just used the No Name Brand of Shredded Nacho Cheese and a mozerrella ball.

Low Carb Zuccini Lasagna

-4 sliced (lengthwise) zucchini (these will be the lasagna noodles)
-1 can of diced tomatos
-1 can of tomato paste
-1 onion
-1/4 cup of red wine or sherry
-1 ball of mozzarella
-1 container (small) of ricotta
-1 egg
-1 package of frozen spinace
-3 garlic cloves
-olive oil

-in frying pan fry, add olive oil and fry up chopped garlic, spinach and nutmeg, set aside to cool
-mix in bowl with ricotta, egg

-in a pot, add chopped onions, paste and tomatoes, simmer and blend

-in the pan, add sauce, layer zucchini, put ricotta mixture, put mozzarella, repeat.

-put in oven 350F for 45 minutes with foil, last 5 minute without.
