Vegetable Cream cheese

* half a bunch of chopped green onions
*1 finely chopped celery
*1 shredded carrots
* garlic salt ( or minced garlic and salt)
* cream cheese

Blend cream cheese, add garlic and vegetables.

Taste just like the expensive one I bought at the local specialty store!

Orzo Chedder Tuna Spinach Casserole

Okay, I made this today on the fly. Here is what I did:

-Cooked orzo as per instruction
-In a separate pot, added milk, butter, 1 tsp of dijon and some nutmeg (bring to a boil), add flour and then grated chedder and mix until thick (cheese sauce)
-Open and drain a can of tuna
-Wash some spinach.

When the cheese sauce was done, I added everything in an mixed.

So delicious.

Although, next time, in a separate pan, I would fry the spinach with some green onions and some celery before adding it. since it will be more soft and wilted.

Sweet Potato Curry Soup

Ingredients

1 chopped onion
2 garlic cloves, chopped
1 inch of ginger, chopped
3 sweet potatoes, chopped
Curry powder, 1 tbsp
Oil
Water (about 3 cups...just eyeball it)

In a pot, add oil, chopped onion, garlic, ginger and curry powder. Fry for a few mintues.

Add chopped sweet potatoes, fry for a few minutes.

Add bouillon (any) and water, boil until sweet potatoes are soft, hand blend.

Tomato Vegetable Orzo Soup

Ingredients:

1 can of diced tomatoes (with oregano and basil)
1 onion chopped
3 garlic cloves , chopped
1 cup of peas
4 chopped carrots
2 chopped celery
Oil
1 to 1 and 1/2 cup of orzo pasta
Water
1 Vegetable Broth Bouillon
1 Chicken Broth Bouillon (no sodium)
Salt
Thyme
Water

In a large Stockpan, add oil, fry onion, garlic, thyme, salt
Fry for a few minutes
Add tomatoes and water (I think I used about 4-6 cups), 
Blend with hand blender
Add carrots, peas, celery, orzo pasta, bouillons, 

Bring to a boil (I suggest adding the orzo near the end around 20 minutes and stirring to prevent it from sticking to bottom) and then simmer until the vegetables are tender.
